I got creative with my simple Turkey Sandwich that I usually eat for lunch during the work week. I decided to use my George Forman as a Panini Press.
Turkey- 4 slices
White American Cheese- 2 slices
1 tablespoon of pesto
2 slices of sourdough bread
1 teaspoon of olive oil
Prep: First pre- heat the grill. Next take both pieces of bread and drizzle a little olive oil this is how the outside of the sandwich will get crispy. Place the pesto on the inside of the bread, place turkey and cheese inside the bread as well. Once the sandwich is ready place on the George Forman or Panini Press. Grill sandwich for about 15 minutes!
1 chicken breast
3 slices of fresh motz
3 basil leaves
2 teaspoons of pesto
santa maria seasoning
1 russet potato
First pre-heat the grill to make sure it gets very hot. Next, place the chicken breast in a bowl drizzle olive oil on both sides. Slice the chicken and stuff it with three slices of fresh motz, pesto and basil. Once the chicken is coated in olive oil, stuffed and seasoned place on the grill. Grill for about 20 minutes make sure that the motz does not fall out of the chicken. Once the chicken is golden brown take off the grill and let it cool.
Roasted Potato Prep:
First pre-heat the oven to 430 degrees. Next wash the potato and slice the potato into cubes. Once the potato is sliced into cubes toss the potato in olive oil, salt and pepper. Next slice up 1/2 of a sweet onion and 1/2 a clove of garlic. I also tossed in some rosemary. Makes the whole house smell amazing. Once the potato is prepped place in the oven in a non-stick greased pan. The potatoes take awhile to get crispy about 45 minutes.
After a long week of traveling and work. Friday night was my one night to unwind. I decided to make one of my favorite home cooked meal. Bow-tie pasta, pesto and chicken. One of the quickest and most delicious meals you can make, pair it with a glass of wine and you’ve got yourself one delicious meal.
pick your favorite type of pasta
3 cups of water
2 teaspoons of olive oil
1/2 teaspoon of salt
2 tablespoons of pesto
1 large chicken breast

Prep the chicken before you start anything. In a bowl place the chicken breast, drizzle olive oil all over the chicken and make sure each side gets the right amount of seasoning. Next pour 3 cups of water into a bowl and boil. Drizzle the olive oil in the bowl while water is boiling. Now pre-heat the oven/grill. Since I am in college and don’t have a grill I use my George Forman which does the job! Place the chicken breast on the George Forman and cook for about 15-20 minutes. While the chicken is grilling, pour the pasta into the boiling water and add salt. After about 10 minutes check the pasta to make sure it is al dente. Once it is al dente strain the pasta and pour it back into the bowl add about 2 tablespoons of pesto stir and set aside. Lastly, you will need to check the chicken make sure it is fully cooked. Once it is pull it off the grill and let it sit for about 15 minutes. Once the chicken has cooled and stopped cooking cut into slices and place on top of the pasta! Pour yourself a glass of your favorite wine and you’ve got yourself a wonderful dinner
1/2 cup of butter softened
3/4 cup of sugar
1/2 teaspoon vanilla
1 3/4 cup of flour
3/4 teaspoon salt
1 teaspoon of baking powder
3 oz of rainbow sprinkles
Pre-heat oven to 350 degrees. In a small mixing bowl pour the flower, baking soda and salt then set aside. In a large mixing bowl beat together the butter and sugar until fluffy. Once the butter/sugar is fluffy add the egg and vanilla. Mix until the batter is smooth.
Slowly add in the dry ingredients. Make sure they are completely combined.
Next in a small bowl pour the rainbow sprinkles. Take round balls of dough and cover them with sprinkles, then place on the cookie sheet.
Bake for 10-15 minutes 🙂
So I used the recipe for Chocolate Chip cookies and replaced the chocolate chips with M&M’s.
2 1/4 cup flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon vanilla
1 cup of butter
2 large eggs
3/4 cup of sugar
3/4 cup of brown sugar
1 bag of holiday M&Ms
Pre-heat oven to 375 degrees. In one mixing bowl place all the dry ingredient and set aside. In the larger mixing bowl place the butter at room temperature, both of the sugars, and then the two eggs. Mix all together and add the vanilla. Slowly start pouring the dry ingredients into the wet ingredients. Once the batter is all mixed together add 2 cups of M&Ms. Place the cookies in round balls on the cookie sheet. Bake 8-10 minutes.
Here is a healthy alternative to french fries!
2-4 Sweet Potato’s ( depending on how many people you are cooking for)
Pre-heat oven to 475 degrees. Peel the potato’s and chop up into fries. Once you have chopped the fries up place all the fries into a mixing bowl. Cover the fries in olive oil, salt, and pepper. Place the fries on a cookie sheet back for 15 minutes and then flip them and bake for another 10 minutes. The perfect alternative to french fries!
Holiday Treat that everyone will enjoy!
1 package of Oreos
2 bags of ghirardelli white chocolate chips
You will need a double boiler to melt the chocolate. Once the water is boiling pour the white chocolate chips into the top bowl of the double boiler. Drizzle a little olive oil so the chocolate melts properly without it burning. Once the white chocolate is all melted dip the Oreo in the chocolate. Make sure the Oreo is fully covered, once the Oreo is covered cover the Oreos in the red and green sprinkles to give it that holiday spirit!
